Brewed from Royal Jade's own Taiwan-grown wheat and soybeans. The wheat is roasted to bring out its aroma before being made into koji with the soybeans. Instead of a fast chemical shortcut, we choose the most labour-intensive route of long, slow stirring that lets air flow through the moromi, so natural fermentation and time can work together. The result is an inviting soy aroma with a touch of fruity acidity, and every drop carries the umami of natural fermentation: a long-loved classic in the kitchen that brings back warm memories.
