It begins with a bean

Sunlight and time from the south of Taiwan
Slow-brewed, additive-free soy sauce made from home-grown grains in Pingtung, Taiwan. Eight varieties; order online.

Good soy sauce is not blended.
It starts as a bean, grown a season in Pingtung soil,
then waits in a clay jar for a year, two, three.
We bottle that waiting.

Royal Jade was founded in Pingtung in 2015. Its founder, Brian Chien, was an electronics engineer who came home to be with family and to look after the land.
He brought an engineer's experimental mind back to the fields: growing his own black soybeans, wheat and rice, cultivating his own koji, and building a bottle of soy sauce from a single seed.
It is not the fastest road. But some flavours can only be bought with time.
Black soybeans, soybeans, wheat and rice grow up in Pingtung's sun and soil. Brewing truly begins the day of harvest.
Six months to three years, never rushed. Sunlight, microbes and patience slowly turn beans and wheat into umami.
Over warm rice, beside freshly pan-fried dumplings, or simply in a small dish, glowing amber. An ordinary meal gains a little ritual.

Eight soy sauces, each with its own time and flavour. Begin here.
The same beans and wheat grow into different colors and aromas depending on aging, ingredients and process. Pour them into a small dish and the difference is plain to see.
